Many of the cheeses that we represent are manufactured completely by hand in small batches under the watchful eye of the Master Cheesemaker. These cheeses are the cheesemakers’ expression of his/her artistic passion-a passion that has been handed down from generation to generation. Only the highest quality ingredients are used to make these unique cheeses. The majority of the cheeses are made with only BST-free milk and without additional hormones and antibiotics. Several are also certified USDA Organic, made with hormone-free and antibiotic-free milk from cows that graze only on fields not treated with pesticides or fed only certified organic feeds.
